The Modern Eater Show 07/11/15
To tip or not to tip? That is the question! Errr, well not at Abrusci’s Italian Restaurant in Wheat Ridge, Co. You see, Abrusci’s owner, Nancy Progar has thrown the traditional tipping system out the window and has mandated a 20% “service charge” on everyone’s overall tab. This mandatory service charge will be used to pay servers an hourly $22 wage. Will this new system work? Will Abrusci’s employee’s work as hard knowing they will make the same wage day in and day out? Have Abrusci’s customers lost their power of deciding how much they believe the server should earn after the meal with their tip? Listen to Greg Hollenback and Chef Jesper Jonsson interview Abrusci’s owner, Nancy Progar where the guys ask the questions people are thinking. You may be surprised with some of the answers Nancy had to give!
